Our restaurant is centered around an open-fire grill, designed to capture the spirit of cooking over a crackling fire pit—just like the cowboys did out on the open range. This rustic yet refined approach brings an authentic sense of the West straight to your table. Our menu highlights a variety of wild game you’d expect to find in those wide-open landscapes, including rabbit, buffalo, and elk. Each dish is thoughtfully prepared to honor traditional flavors while presenting them in a more elevated, contemporary style. The result is a dining experience that celebrates hearty, wholesome food—bold in flavor, rooted in history, and surprisingly healthy.
